Sweet and Savory Roasted Brussels

Ingredients:

  • 425g Brussels sprouts

  • 1 cup dried cranberries (unsweetened)

  • 1.25 cups chopped pecans

  • 4 oz cheese of choice (I used blue cheese goat cheese)

  • Garlic salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F.

  2. Halve the Brussels sprouts and season them with garlic salt and pepper.

  3. Place them on a lined baking sheet and roast for 20 minutes or until slightly browned.

  4. While the Brussels sprouts are roasting, measure the other ingredients and slice the cheese into chunks.

  5. Once the Brussels sprouts are tender, transfer them to a large mixing bowl.

  6. Add the cranberries, pecans, and cheese to the bowl, and mix everything together.

  7. Transfer the mixture to a baking-safe dish.

  8. Bake for an additional 10-15 minutes or until the cheese has melted.
